Asian Cucumber Salad

This asian cucumber salad is prepared in no time. All you need to do is cut the cucumber into bite-sized pieces, then toss it in the flavourful sauce which is made of soy sauce, sesame oil, rice vinegar, honey, ginger, garlic and chilli oil. Just before serving you add some crunchy onion which brings along more texture. The salad can serve as a fresh and flavourful side to many main dishes like rice with duck, BBQ wings, Korean meat dishes and many more.

Ingredients

  • 6 Persian cucumbers (about 800 g)

  • 3 tsp soy sauce

  • 2 tsp sesame oil

  • 1.5 tsp rice vinegar

  • 1 tsp ground ginger

  • 1 garlic clove

  • 2 tsp runny honey

  • 2 tsp sesame seeds (and a bit more for garnish)

  • 1 tsp chilli oil

  • 2 tbsp crunchy onion

Method

  1. Wash 6 Persian cucumbers, cut off the ends, Halve the cucumbers, then halve the halves twice again so you get 8 thin sticks. Shorten those into mouth-sized pieces.

2. in a bowl, combine 3 tsp soy sauce, 2 tsp sesame oil, 1.5 tsp rice vinegar, 1 tsp ground ginger, 1 garlic clove, 2 tsp runny honey, 2 tsp sesame seeds, and 1 tsp chilli oil.

3. Add the cucumber to the bowl and toss well.

4. Garnish the cucumber salad with 2 tbsp crunchy onion, some more sesame seeds, and more chili if desired.
