Salmon in Creamy Spinach

This recipe is a safe way of making perfectly tender salmon fillets. With few simple steps you prepare the creamy spinach, nestle in the salmon and all then takes less than 20 minutes in the oven. A great low carb recipe that is suitable for a Keto diet and full of flavour. If you'd like to add carbs, I recommend serving the salmon with basmati rice. It goes very nicely together.

Ingredients

Preparation time: 35 minutes

  • 2 salmon filets

  • 250 g spinach

  • 1 white onion

  • 2 garlic cloves

  • 80 ml double cream

  • 4 tbsp roasted pine nuts

  • olive oil

  • 1/4 tsp nutmeg

  • salt & pepper

Method

  1. Preheat oven to 180 °C.

  2. Peel and finely dice 1 onion and 2 garlic cloves.

  3. Heat 2 tbsp olive oil to medium heat in a large frying pan.

  4. Add onion, garlic, 1 tsp salt and a generous amount of pepper. Fry for a few minutes until onions have softened.

  5. Add 250 g spinach and gently fry for about 5 minutes until most liquid is released.

  6. Lower heat, stir in 80 ml double cream and 1/4 tsp nutmeg. You can grate the nutmeg by using a fine cheese grater. Add more salt and pepper if necessary.

  7. Transfer all to a small baking dish. Nestle 2 salmon fillets into the spinach. Drizzle each fillet with 1/2 tbsp olive oil and sprinkle with some extra salt and pepper as well as 4 tbsp roasted pine nuts. To roast the pine nuts, simply heat a small frying pan to medium heat. Keep moving the pine nuts around and take them out as soon as they start browning.

  8. Bake for 18-20 minutes. You can check if the salmon is cooked through by cutting into the thickest part of the salmon with a sharp knife. The flesh should not be pink anymore.

  9. Serve salmon bake with a fresh salad to keep this dish low carb. Alternatively, the salmon goes really well with basmati rice.
