Peanut-Choc Energy Bars

To all my peanut butter lovers out there: Feast your taste buds on these no-bake Peanut-Choc Energy Bars! Quick-freeze magic happens in just an hour, and with only a handful of ingredients, you can make these treats. I warn you though: They are highly addictive.

Preparation time: 15 minutes
Time in the freezer: 1 hour

Ingredients
For 6 bars

  • 85g peanut butter

  • 30g honey

  • 1/2 tbsp coconut oil

  • 1/2 tsp ground cinnamon

  • 40g rolled oats

  • 40g peanuts, cashews or almonds

  • 1 tbsp chia seeds

  • 40g dark chocolate

  • pinch of salt

Nutrition: kcal: 223, Protein: 7g, Fat: 14.8g

Method

  1. Melt 85g of peanut butter and 1/2 tbsp of coconut oil in a small saucepan over low heat.

  2. Remove the saucepan from the heat, add 30g of honey and 1/2 tsp of cinnamon, and stir until well combined.

  3. Roughly chop 40g of nuts.

  4. In a medium-sized mixing bowl, combine the peanut butter mixture with 1 tbsp of chia seeds and the chopped nuts until evenly combined.

  5. Line a small baking dish (15cm x 20cm) with baking paper. Transfer the mixture to the baking dish and use a spatula to press down very firmly.

  6. Place the baking dish in the freezer for about an hour.

  7. Remove the bars from the baking dish and use a sharp knife to cut them into six evenly sized-bars.

  8. Melt 40g of dark chocolate and brush one side of the bars. Allow the chocolate to set.

  9. To keep the bars moist, store them in an airtight container either in the refrigerator or in a cool, dark place.
