Watermelon, Couscous & Feta Summer Salad

This refreshing salad combines so many different flavours and textures. It makes an ideal light lunch on a warm summer’s day and serves as a great salad on a picnic or bbq, too.

Ingredients

  • 200g couscous

  • 200g water melon

  • 400ml boiling water

  • 1/2 cucumber

  • 75g feta

  • 1/2 onion

  • juice of 1 fresh lime

  • handful basil

  • 4 tbsp sunflower seeds

  • 4 tsp olive oil

  • salt & pepper

Method

  1. Bring water, 2 tbsp oil and 1 tsp salt to a boil. Turn off the heat and stir in 200 g couscous. Cover the pot with a kitchen towel for 8 mins until the water is fully absorbed. Fluff the couscous with a fork and put aside to cool down.

  1. Cut 200 g watermelon, 1/2 cucumber and 75 g feta into 1 cm big cubes and finely dice 1/2 onion and a handful of basil.

  2. Mix all ingredients under the couscous and add juice of 1 lime, 3 tbsp olive oil and 4 tbsp sunflower seeds. Season with salt & pepper to taste.
