Runny Yolk Breakfast Bagel

This breakfast bagel with avocado and salmon is topped with a runny egg yolk and sprinkled with dill. Exactly what weekend brunch is made for.

Ingredients
For two bagels

  • 2 sesame bagels

  • 2 fresh egg yolks

  • 1 ripe avocado

  • 50 g smoked salmon

  • grainy mustard

  • cream cheese

  • fresh dill

  • butter

  • salt & pepper

Method

  1. Halve 2 sesame bagels. Toast the bottoms.

  2. Melt 2 tbsp of butter in a frying pan. Place the 2 top bagel halves in the frying pan.

  3. Place 2 egg yolks into the bagel holes (one per bagel). Fry for about 4 minutes or until the yolks have hardened a little.

  4. Mash 1 avocado and season with salt & pepper to taste.

  5. Spread cream cheese over the bagel bottoms, followed by grainy mustard.

  6. Add half of the 50 g salmon to each bagel bottom, sprinkle with chopped dill, followed by the mashed avocado and more dill.

  7. Finally, place the bagel tops onto the bagels and finish with more dill.
