Coconut & Chocolate Granola

If you love coconut, then you’ll definitely love this granola.

You only need 6 ingredients and about half an hour to prepare this tasty treat.

First, you need to melt and combine coconut oil, coconut sugar, and honey. Then it is mixed with the oats and desiccated coconut and spread on a baking tray. All is baked in the oven for 25 minutes. When the granola has cooled down, all you need to do is add the chocolate drops and some more desiccated coconut.

You can enjoy the granola as a top-up on yogurts and smoothie bowls or simply with milk.

Ingredients

  • 200 g oats

  • 60 g desiccated coconut (plus 5 tbsp to be added at the end)

  • 60 g coconut oil (about 4 tbsp)

  • 6 tbsp coconut sugar

  • 4 tbsp honey

  • 8 tbsp chocolate drops

  • pinch of salt

Method

  1. Preheat oven to 170 ˚C.

  2. Add 4 tbsp coconut oil, 6 tbsp coconut sugar, and 4 tbsp honey to a small bowl and melt in the oven or microwave. Make sure your bowl is oven/microwave-safe.

  3. In a large mixing bowl, combine 200 g oats, 60 g desiccated coconut, and a pinch of salt.

  4. Stir the coconut oil and sugar until well combined and pour over the oats. Use a spoon to mix it all well together.

  5. Lay a baking tray with baking paper and spread the granola evenly. Gently press it down.

  6. Bake the granola for 25 minutes, moving it around mid-way so it evenly browns.

  7. When the granola has fully cooled down, add 8 tbsp chocolate drops and 5 tbsp desiccated coconut.

  8. The granola keeps for weeks when stored in an airtight container.
