Fig, Goat’s Cheese & Prosciutto Salad with Caramelised Pecans

Ingredients

  • 3-4 figs

  • 1 roll goat’s cheese (150 g)

  • 80 g Prosciutto

  • 120 g rocket

  • Handful of pecan nuts

  • 2 tbsp sugar

  • Balsamic or fig glaze (I used Jamie Oliver’s Sticky Fig & Balsamic Drizzle -> Ocado link)

Method

  1. To caramelize the nuts: Place the pecan nuts in a small saucepan or frying pan and bring them to medium heat, then add the sugar. When the sugar starts melting, use a wooden spoon to stir the nuts until the sugar has fully melted. Take the pan off the heat and let the nuts cool down.

  2. Wash the figs, dry them with a kitchen towel, cut the stems off, then cut them into slices.

  3. Cut the goat’s cheese into slices.

  4. Place the rocket in a salad bowl, then add the fig and goat’s cheese slices. Pull the prosciutto into strings and add as well. 

  5. Lastly, drizzle all with fig & balsamic glaze.
