Smashed Cucumber Salad with Mustard-Dill Dresing

I have been making this smashed cucumber & dill salad a lot recently. i love how fresh and flavourful it is and it works great as a side salad for most dishes. This salad has also become a must for all of my BBQs. 

Preparation time: 15 minutes

Ingredients

  1. 1 cucumber

  2. 2 tbsp chopped fresh dill

  3. 75 g feta

  4. 1 tbsp grainy mustard

  5. 1 tbsp runny honey

  6. 1 tbsp olive oil

  7. 1 tbsp white wine vinegar

  8. 1/2 tsp salt

Method

  1. Wash 1 cucumber, cut the ends off, then halve it lengthwise.

  2. Place the cucumber with the cut side facing down on a chopping board. Place a flat object (e.g. large knife) over the cucumber and smack it with your palm until the cucumber splits. Repeat along its full length. Halve each half lengthwise again, then cut the cucumber diagonally into bite-sized pieces. Place the cucumber in a serving bowl.

  3. Chop some dill so you get around 2 tbsp. Make sure to remove the stems and was the dill beforehand.

  4. For the sauce: Mix 1 tbsp grainy mustard, 1 tbsp runny honey, 1 tbsp olive oil, 1 tbsp white wine vinegar, and 1/2 tsp salt. Add the dill, then mix until well combined.

  5. Crumble 75g feta over the cucumber, then drizzle with the dressing.
