Pret A Manger’s Bircher Muesli

Pret A Manger’s bircher muesli is one of their most popular breakfast items. It has sweetened up quite a few of my mornings, too so I replicated it at home. It is really simple to prepare: The oats, grated green apple, cranberries, raisins and seeds are soaked in yoghurt overnight and then the muesli is topped with pistachios, cranberries and pomegranate the next morning. It keeps well in the fridge for a couple of days so you may as well prepare some more for the week.

Ingredients
Serves 2
401 kcal per serving

  • 200 g Greek yogurt (low-fat yogurt works as well)

  • 50 g rolled oats

  • 2 green apples

  • 20 g raisins

  • 20 g cranberries (and a few extra)

  • 1.5 tbsp pumpkin seeds

  • 1 tbsp honey

  • 10 g pistachios

  • 3 tbsp pomegranate kernels

Method

  1. Wash 2 green apples and grate them into a medium-sized bowl.

  2. Add 200 g yogurt, 50 g rolled oats, 20 g raisins, 20 g cranberries, 1.5 tbsp pumpkin seeds, 1 tbsp honey to the bowl and combine well.

  3. Refrigerate the muesli overnight.

  4. Top the muesli with 10 g pistachios, 3 tbsp pomegranate kernels, and the remaining cranberries.
