Pret A Manger’s Sunshine Bowl

Pret a Manger’s vegan sunshine bowl is one of my favourite breakfast options there. Especially in summer, it is the ideal fresh and fruity breakfast. I have replicated it at home and it is so easy and quick to prepare. I have added my Homemade Crunchy Nut Granola which is. also very simple and quick to make and tastes heavenly in this bowl.

Ingredients
Serves 2

  • 1 mango (250 g)

  • 2 bananas (200 g)

  • handful blueberries

  • 2 tbsp coconut milk

  • 1.5 tbsp lemon juice

  • 4 tbsp granola

  • 2 tbsp desiccated coconut or coconut flakes

Method

  1. Peel and cut 1 mango and 1 banana. Place them in a blender, add 2 tbsp coconut milk and 1.5 tbsp lemon juice. Blend until an even puree like mixture comes together.

  2. Ideally, refrigerate the mango-banana puree for 30 minutes so it cools down. If you don’t have the time don’t worry, the bowl will still taste great!

  3. Cut 1 banana cut into slices. Divide the mango-banana puree between 2 bowls. Decorate with the banana slices, a handful of blueberries, 4 tbsp Crunchy Nut Granola or granola of your choice and 2 tbsp desiccated coconut or coconut flakes.
