Snickers Energy Bars

You can very easily make your own energy bars at home. These Snickers-inspired bars are delicious, and filling and yet don’t sit heavily in the stomach which makes them the perfect snack before a workout or just on the go.

The bars mainly consist of bananas, oats, peanuts, and chocolate drops. After baking the bars you can drizzle them with some caramel sauce. If you prefer a low-sugar version, you can obviously leave out the caramel sauce.

The caramel sauce is made whilst the bars cool down after coming out of the oven. If you wish to prepare more caramel sauce you can find the recipe here. The sauce stores well for a month and can be used to garnish brownies, cakes, or ice cream.

Ingredients
For 6 bars
Preparation time: 45 minutes

  • 150 g rolled oats

  • 3 ripe bananas

  • 3 tbsp chocolate drops

  • 50 ml oat milk

  • 3 tbsp salted peanuts (if you have unsalted peanuts you can add salt within the baking process)

  • vegetable oil or spray

  • pinch of salt

For the caramel sauce:

  • 40 g sugar

  • 50 ml double cream

  • 1 tsp butter

You also need:

  • small oven dish (20 x 15 cm)

  • small mixing bowl or soup plate

  • fork

  • sharp knife

  • brush

Method

  1. Preheat the oven to 180 °C.

  2. Mash 3 bananas, using a fork. Chop 2 tbsp peanuts.

  3. Add 150 g oats, 3 tbsp chocolate drops, and chopped peanuts. If you are using unsalted peanuts, add a pinch of salt. Mix all until evenly combined.

  4. Brush or spray a small oven dish (20 x 15 cm) with vegetable oil.

  5. Add the oat mixture to the oven dish and press it down with a fork.

  6. Place the oven dish on the middle oven rack and bake for 25-30 minutes until lightly golden. Let it cool down for 10 minutes.

  7. Whilst the bars cool down, heat up 50 ml double cream. At the same time preheat a small frying pan to medium heat, then add 40 g sugar. When the sugar starts melting, stir with a wooden spoon until fully liquid and browned. Slowly pour in the warm cream whilst stirring. Stir in 1 tsp butter until fully dissolved.

  8. Run a sharp knife around the edges of the oat bar to separate it from the baking dish. Slide the oat bar onto a chopping board and cut it into six evenly sized bars. Lightly drizzle the bars with the caramel sauce.
    Store the bars in an air-tight container so they stay moist. They will keep for around a week.
