Breakfast Bars

It takes a few simple steps to make these juicy breakfast bars. All you need are six ingredients: bananas, oats, cashew nuts, dates, and oat milk (or the milk alternative of your choice). After combining all ingredients the mixture is pressed into a baking tin and only needs 20 minutes of baking time. The bars are drizzled with a little bit of dark chocolate and voilà you have your homemade, natural, vegan, tasty breakfast bars. You can store them for at least one week in an airtight container. Besides having these bars as a quick breakfast to-go, I like having them as a pre-gym energy booster or simply as a snack.

Ingredients
For 7 bars
Preparation time: 10 minutes
Baking time: 20 minutes

  • 150 g rolled oats

  • 3 ripe bananas

  • 5 dates

  • 60 ml oat milk (or other milk alternatives)

  • 30 g cashew nuts

  • 20 g dark chocolate

  • vegetable oil or spray

You also need:

  • small oven dish (20 x 15 cm)

  • small mixing bowl

  • fork

  • sharp knife

Method

  1. Preheat the oven to 180 °C.

  2. Mash 3 bananas, using a fork. Chop 30 g cashew nuts. Remove the seeds of 5 dates, then chop them into small chunks.

  3. Combine all with 150 g oats.

  4. Brush or spray a small oven dish (20 x 15 cm) with vegetable oil (alternatively you can lay the oven dish out with baking paper).

  5. Add the oat mixture to the oven dish and press it down with a fork.

  6. Place the oven dish on the middle oven rack and bake for about 20 minutes or until lightly golden. Let it cool down.

  7. When the bars have cooled down, drizzle them with 20 g melted dark chocolate. (You can either melt the chocolate on low heat in a small saucepan or in the microwave. In either case, make sure that you stir the chocolate throughout so it doesn’t burn.)

  8. Run a sharp knife around the edges of the bar to separate it from the baking dish. Slide the oat bar onto a chopping board and cut it into evenly-sized smaller bars.
    Store the bars in an air-tight container so they stay juicy. They will keep for at least one week.
