Pistachio, Cranberry & Dark Choc Granola

This pistachio, cranberry & dark chocolate granola doesn't just taste but also looks amazing. With only 15 minutes in the oven, it is super quickly prepared, too. Make sure you don’t add the pistachios and cranberries in the beginning, as they will burn.

Ingredients
Preparation time: 30 minutes

  • 300 g oats

  • 60 g dark chocolate drops

  • 60 g flaked almonds

  • 50 g pistachios

  • 40 g cranberries

  • 20 g chia seeds

  • 50 g coconut oil

  • 100 ml maple syrup

  • 2 tbsp honey

  • 1 tsp ground cardamom

  • 1 tsp salt

Method

  1. Preheat oven to 160 degrees.

  2. Add 300 g oats, 60 g flaked almonds, 20 g chia seeds, 1 tsp ground cardamom, and 1 tsp salt to a large mixing bowl.

  3. Melt 50 g coconut oil and mix with 100 ml maple syrup and 2 tbsp honey. Add to the oats and mix under so all is well coated.

  4. Spread half of the mixture onto a baking tray with baking paper and press down with a spoon.

  5. Bake for 10 minutes, then move the granola around so it gets nice and golden from all sides. Add 50 g pistachios and 40 g cranberries and mix under. Bake for 5 more minutes.

  6. Take the baking sheet off the tray and let it cool down. Repeat the baking process with the other half of the granola.

  7. Mix the granola with 60 g dark chocolate drops and fill it all into a jaw.
